10-Minute Asian Cucumber Salad

Refreshing, crunchy and cool! This thinly sliced cucumber salad is made fast + fresh with rice vinegar, garlic, scallions, cilantro and ginger. Incredibly delicious side dish to Asian dumplings, noodles or grilled meats!

Just about nothing can get in the way of my noodle obsession lately, except sliding a slippery bowlful alongside a plate of crisp, tangy marinated cucumbers.

Though this flavorful, crunchy cucumber salad is inspired by my love of Asian cuisine, it pairs perfectly with so many dishes. Lemony fish, smoky meats and chicken, and charred veggies hot off the grill NEED these cucumbers all summer long. Especially if you’re keeping it low-carb, this is one incredibly flavorful, quick and easy side dish not to miss.

Ready to make your own 10-Minute Asian Cucumber Salad?

• In a medium bowl, combine cucumber, garlic, scallions and cilantro.

• In a separate bowl, whisk vinegar, sesame oil, canola oil, soy sauce, sugar, garlic, ginger, red pepper flakes, salt and pepper. Pour over the cucumber mixture and toss to coat evenly.

• Cover and refrigerate until ready to serve.

Whether you’re enjoying these crunchy cucumbers al fresco on a patio, or by the t.v. in the respite of air conditioning on a hot day, this clean veggie dish will make you feel good from the inside out. Want to keep it even easier? Marinade these in the morning, and enjoy for lunch or as an easy dinner side dish. These are tangy, bright, full of spicy ginger and fresh cilantro, scallions and garlic. They are a teensy bit spicy (adjust seasonings to your taste preferences). Y’all, this is NOT a recipe you need to follow exactly. Because where is the fun in that?

10-Minute Asian Cucumber Salad

Ingredients

  • 1 large cucumber, thinly sliced
  • 1 small garlic clove, minced
  • 2-3 scallions, thinly sliced
  • 1 Tablespoon chopped fresh cilantro
  • 3 Tablespoons rice vinegar
  • 2 Tablespoons sesame oil
  • 2 Tablespoons canola oil, {or other neutral oil, such as sunflower, grapeseed, or avocado oil)
  • 1 Tablespoon soy sauce
  • 1 teaspoon granulated sugar
  • 1 teaspoon minced fresh ginger
  • 1/8 teaspoon crushed red pepper flakes
  • Coarse salt and freshly ground pepper, to taste

Instructions

  1. In a medium bowl, combine cucumber, garlic, scallions and cilantro.
