Can I freeze the dough?

Absolutely! Scoop the dough onto a tray, freeze until solid, then transfer to a freezer bag. Bake straight from the freezer, adding an extra 1-2 minutes to the baking time.

Can I drizzle with other types of chocolate?

Yes! White chocolate is optional, but you can also use dark or milk chocolate. Even peanut butter chips or caramel drizzle works beautifully for a twist.

Chewy Spice Cake Mix Cookies

Chewy Spice Cake Mix Cookies

Yield: 12-15 cookies
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients

  • 1 (15.25-ounce) box spice cake mix
  • ½ scant cup vegetable oil , or 7 TB melted butter
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 Tablespoon ground cinnamon
  • 1 cup white chocolate chips, optional

Instructions

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

In a large bowl, whisk cake mix, oil, and eggs until combined. Refrigerate dough for 15-20 minutes (since dough it sticky, refrigerating helps it firm up for scooping).

In a shallow bowl, combine sugar and cinnamon. Scoop dough and roll into balls. Coat each completely in cinnamon sugar.

Bake 10-12 minutes, or until cookies are set and still soft. Cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Store in an airtight container for up to 3 days.

    Enjoy!

Notes

For optional drizzle, melt 1 cup white chocolate chips (or any desired chocolate or candy coating) and drizzle over the cooled cookies.
