Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large bowl, whisk cake mix, oil, and eggs until combined. Refrigerate dough for 15-20 minutes (since dough it sticky, refrigerating helps it firm up for scooping).
In a shallow bowl, combine sugar and cinnamon. Scoop dough and roll into balls. Coat each completely in cinnamon sugar.
Bake 10-12 minutes, or until cookies are set and still soft. Cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Store in an airtight container for up to 3 days.
