Bacon + Eggs Tater Tot Breakfast Casserole

Comforting, quick and oh-so scrumptious! This make-ahead cheesy, belly-warming bacon and egg casserole feeds a crowd on holiday mornings and anytime of year. Every slice is SO good served with salsa and sour cream. Tastes like a loaded baked potato!


Looking for an easy, comforting breakfast that will satisfy everyone? This delicious egg, bacon and sausage tater tot dish has got you covered!

We served this for a special holiday breakfast, and it was quickly devoured by our hungry crowd! Layers of crispy potato tots, eggs, cheese, bacon, sausage and green onions make this one mouthwatering, cozy meal for mornings at home. This cheesy, dreamy breakfast favorite is so quick to create, and can easily be prepared one day ahead.

The steps are simple:

Cook bacon ’til crisp (easy method: 375 degree F oven, place bacon on lined baking sheets, bake for 15-18 minutes). Use the same method for cooking chopped sausage. Remove from oven and drain on paper towels. Chop bacon and set aside.

Preheat oven to 375 degrees F. Spray a 13 x 9-inch baking dish with nonstick cooking spray. Line bottom of baking dish with tater tots.

In a large bowl, whisk eggs, milk, salt, onion powder, garlic powder and pepper. Add sausage. Stir in half of bacon, half green onions, and half cheese. Pour mixture evenly over tater tots.

Bake uncovered for 40-45 minutes, or until eggs are set. Sprinkle with remaining bacon, green onions, and cheese. Return dish to oven and cook for 5 minutes, or until cheese has melted.

Serve warm, slice into squares, and enjoy!

Bacon + Eggs Tater Tot Casserole

Ingredients

  • 1 (32 oz.) package frozen tater tots
  • 12 strips thick-cut bacon
  • 10 breakfast sausage links, chopped, I used a 12 oz. package of Johnsonville breakfast sausage
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 5 green onions, chopped
  • 3 cups grated cheddar cheese

For serving (optional):

  • Sour cream
  • Fresh salsa
  • Hot sauce

Notes

This can be made one day ahead and refrigerated. Assemble completely (including pouring egg over tots) and cover with plastic wrap. Chill in your refrigerator and bake at normal temp.
