10-Minute Saucy Ramen Noodles

Ramen is quick to make for easy weeknight dinners, or as a fun side dish to meats, fish, sushi and soups. Try it tonight!

I’m always trying to recreate our favorite takeout dishes, especially from Japanese restaurants. To say the least, we’ve had our fair share of experimenting in the kitchen with unique flavors and ingredients the past year and a half. I really enjoy mixing up meals that I didn’t realize were so easy to cook at home!

These saucy, slippery Ramen noodles are coated in a rich, tangy and slightly spicy sauce, which is simply made on your stovetop in about 5 minutes – yes, you heard that right! This ridiculously easy, restaurant quality dish cooks up in only 10 minutes. A big bowl-full is not only gorgeous with a sprinkle of sesame seeds and scallions, but absolutely scrumptious on a cozy night – and quicker than getting delivery!

These noodles are best enjoyed the same day you cook them, as the Ramen really soaks up the sauce over time. Don’t get me wrong, these still made delicious leftovers! But, you will be devouring this right out of the pot anyway.

Let me show you the easy steps to flavorful, elegant Ramen noodles at home – made quick and easy!

Ready to cook your 10-Minute Saucy Ramen Noodles?

• Unwrap ramen noodles and discard seasoning packet; set aside.

• In a small bowl, mix cornstarch and 2 Tbsp. water; set aside.

• In a small pot, whisk water, soy sauce, maple syrup, rice vinegar, sesame oil, chili garlic sauce, crushed red pepper flakes, and garlic together. Bring to a boil, then reduce heat to low. Stir in cornstarch-water mixture. Simmer and stir until thickened, 2-3 minutes. Mixture should coat the back of a spoon. Feel free to adjust seasonings to your preference. Remove from heat and cover; set aside.

• In a medium pot set to high heat, boil 6 cups water. Stir in ramen noodles. Cook noodles for about 2 minutes, until still chewy. They will continue cooking in the sauce once combined.

• Drain noodles and return to pot. Pour sauce over noodles and mix to coat well.

• Set pot to medium-high heat and cook noodles in sauce, until sauce is slightly absorbed and noodles are tender, about 3 minutes.

• Garnish with sesame seeds and chopped scallions, if desired.

• Serve hot and enjoy!

Ingredients

  • 2 (3-oz. packages) dry ramen noodles
  • 2 Tbsp. cornstarch
  • 2 Tbsp. water

For the sauce:

  • 1 cup water
  • 6 Tbsp. soy sauce
  • 2 Tbsp. maple syrup
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. toasted sesame oil
  • 1/2 Tbsp. chili garlic sauce
  • 1/4 tsp. crushed red pepper flakes, or, to taste
  • 2 cloves garlic, minced

For topping, optional:

  • Chopped scallions
  • Sesame seeds
