If you need an easy, cozy (and downright delicious) baked potato recipe for the side of your wintry roasts, look no further. Though this recipe is simple and only needs five ingredients, it produces the most satisfying, warm-you-to-the-bone baked potato ever. Those little sliced pockets? Those are your friend. They crisp up perfectly every time. And they want butter, parmesan, and flaky salt.

Hot out of the oven, these potatoes are a sizzling dream. Dress them up however you like. They’re lovely as-is, since they roast with olive oil and salt. I have heart eyes for those crispy French fry-like edges. Oh, mama!

However, let’s not shy away from a bit of bacon, cheese and sour cream on top, either. Load on the chives, too!

Ready to bake your own Parmesan Hasselback Potatoes?

• Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil.

• Using a sharp knife, make small cuts across each potato, about 1/8-inch apart and 1/4-inch deep (do not cut all the way to the bottom).

• Place potatoes onto prepared baking sheet. Drizzle evenly with olive oil. Season with salt and pepper, to taste.

• Bake until tender and crisp, 1 hour to 1 hour, 15 minutes, depending on the size of your potatoes.

• Remove from oven and garnish with grated Parmesan and chopped chives.

• Serve hot and enjoy!
