Every week, I buy a bunch of bananas for the house. Yet every week, the time comes around when I have a handful going brown!
This may bum out some of you, but I just see delicious banana creations on the horizon – muffins, pies, smoothies, donut holes, pancakes, and everyone’s old fashioned standby – banana bread. This week, I thought, let’s change it up from the usual loaf (which everyone loves so much, but hey, bakers gotta bake).
Who doesn’t a sweet and crumbly coffee cake with a sneaky lil’ cinnamon streusel tucked inside those pillowy-soft layers? You got that right – NOBODY. 😉
Let’s gather our ingredients and bake one together!
I have more than a dozen memories sitting around the table with a bakery-style coffee cake, hot java in hand, and enjoying slow conversation.
These are the reasons I love breakfast and a dish like this that brings everyone together. It’s just the coziest feeling to enjoy a coffee cake with family, and the warm aroma that it sends through the house.
Waking up slow with a good meal and a whole day stretching out ahead of you. What’s better?
Ready to make your own Banana Coffee Cake?
• Preheat oven to 350 degrees F. Lightly grease a 8×8 inch pan.
• In a large bowl, mix together flour, sugar, brown sugar, baking powder, baking soda and salt. Set aside.
• In a medium bowl, mash the banana. Add sour cream, oil, egg and vanilla. Mix until well combined. Stir thoroughly into the flour mixture.
• For the streusel: In a small mixing bowl, stir flour, sugar, cinnamon and butter together until crumbly. Spread half the cake batter evenly into the prepared pan. Sprinkle with 1/2 of the streusel. Pour the remaining batter evenly over the streusel. Top with remaining streusel.
• Bake for 35-40 minutes, until a toothpick comes out clean.
• For the glaze: Whisk powdered sugar, heavy cream and vanilla in a medium bowl, until creamy and smooth. Drizzle over warm coffee cake. Slice and serve.

This delicious, inviting banana coffee cake recipe became a fast favorite in my house! It was so soft, fluffy and nicely spiced with warm cinnamon, brown sugar, and a creamy 3-ingredient vanilla glaze. The perfect cross between banana bread and coffee cake – and already getting me a bit excited for fall flavors (too soon?).
Our other belly-warming banana treats will still be enjoyed for years to come. But, this one is certainly being added to the rotation next time I find a browning 🍌 bunch on the counter.

Banana Coffee Cake
Ingredients
- 1-1/3 cup all-purpose flour
- 1/3 cup granulated sugar
- 3 Tablespoons brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 2-3 bananas, mashed, about 3/4 cup
- 1/2 cup sour cream
- 1/3 cup canola oil
- 1 large egg
- 1/2 teaspoon vanilla extract
For the streusel:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup melted butter
For the glaze:
- 1/2 cup powdered sugar
- 1-2 Tablespoons heavy cream
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees F. Lightly grease a 8x8 inch pan.
- In a large bowl, mix together flour, sugar, brown sugar, baking powder, baking soda and salt. Set aside.
- In a medium bowl, mash the banana. Add sour cream, oil, egg and vanilla. Mix until well combined. Stir thoroughly into the flour mixture.
For the streusel:
- In a small mixing bowl, stir all ingredients together until crumbly.
- Spread half the cake batter evenly into the prepared pan. Sprinkle with 1/2 of the streusel. Pour the remaining batter evenly over the streusel. Top with remaining streusel.
- Bake for 35-40 minutes, until a toothpick comes out clean.
For the glaze:
- Whisk all ingredients in a medium bowl, until creamy and smooth. Drizzle over warm coffee cake. Slice and serve.
