Over here, we like to wake up slowly on weekends. But, as soon as the coffee starts brewing I get energized to cook a little breakfast for the crew. Everyone loves the big spread of toast, eggs and fruit. And those family moments make for a nice, relaxed start to the day.

These mini, fluffy pancake bites are definitely worth waking up for. If you have 10 minutes and a few bananas hanging around, you probably have the rest of what you need for this breakfast magic! The batter comes together quick and easy. Before you know it, you have tiny battered bananas with a tender pancake coating and soft, fruity center. They are begging for a drizzle of maple syrup and berries on the side. So simple, scrumptious and adorably fun.

Ready to cook your own Banana Pancake Bites?

• In a medium bowl, whisk flour, brown sugar, baking powder, cinnamon and salt. Set aside.

• Stir in milk, oil, egg and vanilla until well combined. Let batter rest for 10 minutes.

• Grease a large nonstick skillet with nonstick cooking spray. Set to medium-low heat.

• Dip banana slices in pancake batter. Using a fork, lift out one slice at a time. Gently shake excess batter off each slice. Place directly onto the hot skillet. Continue with remaining slices, careful not to overcrowd your pan. Allow bananas to cook for 2-3 minutes on each side.

• Transfer to an oven-safe plate. Keep warm in a 250-degree oven, until ready to serve.

• Sprinkle with powdered sugar, if desired. Maple syrup and berries are also delicious with these pancake bites.

• Serve warm and enjoy!

What other fruits can I use?

Instead of bananas, try strawberries or blackberries. Sliced apples, plums, peaches, pears and apricots would be delicious, too.

Can I use my favorite pancake recipe for dipping?

Sure! Any pancake recipe you like is suitable for dipping. However, I would make sure your pancake batter has a more thick consistency. This way, the runny batter doesn’t flake off the fruit as you pan fry.

Can I make this recipe ahead?

These are best enjoyed hot off the pan. As you fry, transfer the pancake bites to an oven-safe plate. Keep warm in a 250-degree-F oven, for up to 1 hour. This will keep your tiny pancakes perfectly toasty.

What should I serve Banana Pancake Bites with?

Ingredients

  • Nonstick cooking spray
  • 1-1/2 cups all-purpose flour
  • 2 Tablespoons brown sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1-1/4 cups milk
  • 1/4 cup canola oil
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3 firm bananas, sliced 1/2-inch thick

For topping, optional:

  • Maple syrup or powdered sugar
  • Berries, such as blueberries, raspberries, strawberries
