Ingredients
1lbsmoked sausagesuch as kielbasa or andouille, sliced into 1/2-inch rounds
1medium butternut squashpeeled and diced into 1-inch cubes
1red bell pepperdiced
1yellow bell pepperdiced
1small onionchopped
2tbspolive oil
1tspsmoked paprika
1/2tspgarlic powder
1/2tspdried thyme
Salt and pepperto taste
Fresh parsleychopped (for garnish, optional)
Instructions
Preheat your oven to 400°F (200°C).
Place the sausage slices, butternut squash cubes, bell peppers, and onion on a large sheet pan. Drizzle olive oil over the ingredients on the sheet pan.
Sprinkle with smoked paprika, garlic powder, thyme, salt, and pepper.
Toss everything together until evenly coated, then spread out into a single layer.
Bake in the preheated oven for 25–30 minutes, stirring halfway through, until the squash is tender and the sausage is browned.
Garnish with chopped parsley, if desired, and serve warm.
