Parmesan Hasselback Potatoes

Ingredients

gold potatoes
,
about 5-6

olive oil
Kosher salt and cracked black pepper
1/4
cup
grated Parmesan cheese
2
Tablespoons
chopped fresh chives
Instructions
Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil.
Using a sharp knife, make small cuts across each potato, about 1/8-inch apart and 1/4-inch deep (do not cut all the way to the bottom).
Place potatoes onto prepared baking sheet. Drizzle evenly with olive oil. Season with salt and pepper, to taste.
Bake until tender and crisp, 1 hour to 1 hour, 15 minutes, depending on the size of your potatoes.
Remove from oven and garnish with grated Parmesan and chopped chives.
Serve hot and enjoy!
