Raspberry Oatmeal Cookie Crumble Bars
Nonstick cooking spray
unsalted butter, melted
light brown sugar, packed
old-fashioned rolled oats
raspberry jam or preserves
(or your preferred jam/preserve flavor, seeded or seedless)
Preheat oven to 350 degrees F. Line an 8×8-inch square pan with aluminum foil. Coat with cooking spray; set aside.
In a large bowl, whisk melted butter, sugars and vanilla. Stir in flour, oats and salt until well combined.
Set aside 1 heaping cup of the crumble mixture (this is for the topping).
Press remaining mixture into prepared pan. Evenly spread raspberry preserves over top, covering the entire crust. Sprinkle with reserved crumble mixture.
Bake for 30 minutes, or until edges are set and lightly golden brown.
Let bars cool for at least 2 hours, before slicing.
