- Preheat oven to 350 degrees F. Line an 8×8-inch square pan with aluminum foil. Coat with cooking spray; set aside.
- In a large bowl, whisk melted butter, sugars and vanilla. Stir in flour, oats and salt until well combined.
- Set aside 1 heaping cup of the crumble mixture (this is for the topping).
- Press remaining mixture into prepared pan. Evenly spread raspberry preserves over top, covering the entire crust. Sprinkle with reserved crumble mixture.
- Bake for 30 minutes, or until edges are set and lightly golden brown.
- Let bars cool for at least 2 hours, before slicing.
