Ingredients
12oz.Italian sausage, sliced
1Tablespoonolive oil
10oz.potato gnocchi, uncooked
1cupheavy cream
1/2cupchicken broth
1cupbutternut squash puree*
3clovesgarlic, minced
2Tablespoonsfresh sage, chopped
1Tablespoonschopped rosemary
salt and coarsely ground black pepper, to taste
Instructions
Heat 1 tablespoon of olive oil on medium heat in a large, high-sided skillet.
Add sausage and cook on medium heat for 5-6 minutes, until browned.
Set the same skillet to medium heat. Add uncooked potato gnocchi, heavy cream, and chicken stock. Bring to a boil and stir well. Cover with lid. Allow the gnocchi to cook for about 5 minutes.
To the same skillet, add butternut squash puree and minced garlic. Bring sauce to a boil, reduce to low heat, stir well. Cook for about 3 or more minutes, until gnocchi is cooked and sauce has thickened. Remove from heat.
Stir in half of the fresh sage and half of the fresh thyme. Season with salt and freshly ground coarse black pepper.
When serving, top with the remaining sage and thyme.

How to Make Butternut Squash Purée
In a medium saucepan, add about 1 cup chopped butternut squash. Cover with water. Bring to a boil over medium-high heat. Reduce heat and simmer for 10–12 minutes, or until squash is fork-tender.
Transfer cooked squash to a food processor or use an immersion blender right in the pot. Blend until smooth, adding a tablespoon or two of water (or broth) as needed to reach your desired consistency.
