Method
- Preheat oven to 350 degrees F. Line a large baking sheet with a silicone mat or parchment paper.
- In a large bowl, combine cake mix, oil, eggs, lemon zest and juice (or sub with 1 teaspoon lemon extract). Blend well until combined.
- Wrap dough in plastic wrap and refrigerate for 20 minutes. This will make it easier to work with, since it is sticky.
- Scoop about 1 tablespoon cookie dough into your hand; roll into a ball. Roll dough balls into powdered sugar and place on the baking sheet.
- Bake for 9-11 minutes, or until the cookies are set (do not brown). Let cool for a couple minutes. Transfer to a wire rack to cool completely.

Notes
To Freeze: Allow cookies to cool. Once hard, stack in a freezer container or zip top bag for up to 3 months. Remove from the freezer 2 hours before serving.
