Line a 13x9-inch baking pan with parchment paper. Set aside.
Add heavy cream to a large bowl. Using an electric mixer set to medium, beat until cream is mostly thickened. Stop mixer. Add confectioner's sugar and resume mixing, slowly increasing speed to high.
Beat until cream is thick and stiff. Mix in food coloring, 1 drop at a time, until you reach your desired color.
Pour whipped cream into the prepared pan. Freeze for at least 2 hours.
