12oz.smoked sausagesliced (beef, pork or turkey sausage work fine)
2mediumsweet potatoespeeled and small diced
2crisp applescored and diced
1lb.Brussels sproutshalved
1mediumred onioncut into chunks
2garlic clovesminced
1/4cupolive oil
1/4cuppure maple syrup
2Tbsp.Dijon mustard
Kosher salt and freshly cracked black pepper
Instructions
Preheat oven to 400 degrees F. Coat a large rimmed sheet pan with nonstick cooking spray.
Toss sausage, sweet potatoes, apples, Brussels sprouts, onion and garlic onto sheet pan. If necessary, divide mixture between two pans.
In a small bowl, whisk olive oil, maple syrup and Dijon. Drizzle over sausage-veggie mixture. Toss to coat evenly. Sprinkle with salt and pepper, to taste.
Place in oven and roast for 30-40 minutes, until veggies are tender.
