1 lemon, zested and juice of half lemon(or 1 teaspoon lemon extract)
For rolling the cookies:
1/4 cup powdered sugar
Instructions
Preheat oven to 350 degrees F. Line a large baking sheet with a silicone mat or parchment paper.
In a large bowl, combine cake mix, oil, eggs, lemon zest and juice (or sub with 1 teaspoon lemon extract). Blend well until combined.
Wrap dough in plastic wrap and refrigerate for 20 minutes. This will make it easier to work with, since it is sticky.
Scoop about 1 tablespoon cookie dough into your hand; roll into a ball. Roll dough balls into powdered sugar and place on the baking sheet.
Bake for 9-11 minutes, or until the cookies are set (do not brown). Let cool for a couple minutes. Transfer to a wire rack to cool completely.

Notes
To Freeze: Allow cookies to cool. Once hard, stack in a freezer container or zip top bag for up to 3 months. Remove from the freezer 2 hours before serving.Adapted from I Heart Naptime
