12oz.smoked sausage, sliced (beef, pork or turkey sausage work fine)
2medium sweet potatoes, peeled and small diced
2crisp apples, cored and diced
1lb.Brussels sprouts, halved
1medium red onion, cut into chunks
2garlic cloves, minced
1/4cupolive oil
1/4cuppure maple syrup
2Tbsp.Dijon mustard
Kosher salt and freshly cracked black pepper
Instructions
Preheat oven to 400 degrees F. Coat a large rimmed sheet pan with nonstick cooking spray.
Toss sausage, sweet potatoes, apples, Brussels sprouts, onion and garlic onto sheet pan. If necessary, divide mixture between two pans.
In a small bowl, whisk olive oil, maple syrup and Dijon. Drizzle over sausage-veggie mixture. Toss to coat evenly. Sprinkle with salt and pepper, to taste.
Place in oven and roast for 30-40 minutes, until veggies are tender.
