1/3cupBBQ sauceyour favorite (or less/more, to your taste)
Instructions
Preheat oven to 400 degrees F. Lay sweet potatoes on a large baking sheet. Roast until tender, about one hour, depending on size of your potatoes.
Once sweet potatoes have been cooking for 30 minutes, add chicken breasts to a separate baking sheet. Place in oven and continue cooking for 30 minutes.
In a saucepan set to medium-low, stir BBQ sauce. Heat until warm, about 5 minutes.
Once chicken is cooked, shred with two forks or electric hand mixer. Add to BBQ sauce.
Halve each potato and top with scoopfuls of chicken. Spoon over additional BBQ sauce. Sprinkle with salt and pepper.
