Preheat to 500 degrees F. Prepare a large baking sheet or pizza stone.
Slice meatballs. Spread both flatbreads with pizza sauce(about 2 Tbsp. each). Sprinkle 1/2 cup of mozzarella on each flatbread. Top with meatball slices. Top with remaining mozzarella. Sprinkle with parmesan cheese. Place onto your prepared pan.
Bake for 10-12 minutes, watching carefully to avoid burning. Your pizza's edges should be crisp and cheese melted and bubbly.
Meanwhile, prepare your hot honey (if using) by whisking melted butter, honey and hot sauce in a small bowl.
Remove from oven. Drizzle with hot honey mixture. Sprinkle with additional parmesan cheese, chopped tomatoes and parsley/basil, if desired.
Transfer pizzas (one at a time) from the pan to a cutting board.
