2 Tablespoons canola oil{or other neutral oil, such as sunflower, grapeseed, or avocado oil)
1 Tablespoon soy sauce
1 teaspoon granulated sugar
1 teaspoon minced fresh ginger
1/8 teaspoon crushed red pepper flakes
Coarse salt and freshly ground pepperto taste
Instructions
In a medium bowl, combine cucumber, garlic, scallions and cilantro.
In a separate bowl, whisk vinegar, sesame oil, canola oil, soy sauce, sugar, garlic, ginger, red pepper flakes, salt and pepper. Pour over the cucumber mixture and toss to coat evenly.
