These have to be the most fabulous chocolate cupcakes I’ve ever made from scratch. Super soft, fluffy and absolutely decadent with a dollop (okay, more like a heap) of homemade Nutella frosting. They come together in less than 5 minutes, bake in 20, and can be in your belly in another 5… seconds. Just slather on the frosting, put them on a pretty plate, and dig in. Whether you share or not is up to you!

Clearly, since it’s not Valentine’s Day yet (and technically I count for two) I did no such sharing.

But, back to chocolate! It happens to be my other half’s favorite flavor, and since he’s taking me to a fancy pants dinner next Friday, I’ll have to bake him another batch then. And then another batch still, since I’ll probably eat the second batch myself. And then, why wouldn’t I have just made a dozen damn cupcakes in the first place?!

You’re gonna absolutely love these easy, egg-free cupcakes, I guaran-darn-tee it. All you need are itty bitty measurements of basic pantry staples, a love of chocolate, and a willingness to pretend they’re for “two.” With a swirl of rich, creamy Nutella frosting, each bite of this cupcake is a little bit of bliss!

Garnish yours with a pinch of sprinkles, fresh berries, or candy hearts for a special sumthin’, maybe? Or, if there’s no time, just grab a glass of milk and go to town!

One Bowl Chocolate Cupcakes for Two

Yield: 2 cupcakes

Ingredients

For the Chocolate Cupcakes:

  • 3 Tablespoons all-purpose flour
  • 2 Tablespoons granulated sugar
  • 1 Tablespoon unsweetened cocoa powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 Tablespoons milk
  • 1 Tablespoon vegetable or canola oil
  • 1/2 teaspoon pure vanilla extract

For the Nutella Frosting:

  • 2 Tablespoons unsalted butter, room temperature
  • 1/4 cup Nutella
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/2 to 1 teaspoon milk

Instructions

  1. For the Chocolate Cupcakes: Preheat oven to 350 degrees F. Line 2 cups of a 12-cup muffin tin with paper liners. Spray with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking soda and salt. Whisk in milk, oil and vanilla until just combined. Divide batter evenly between cups.
  3. Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  4. For the Nutella Frosting: With an electric mixer in a medium bowl, beat butter and Nutella until smooth. Mix in powdered sugar until well blended. Add vanilla and 1/2 teaspoon milk; mix until incorporated. Add additional milk if necessary to achieve desired consistency.
  5. Spread or pipe onto cooled cupcakes.
  6. Enjoy!

    I made cupcakes for “two” yesterday as well, which I’ll post up on the blog in the near future :P I am not eating for two though, but still decided not to share them…because… My friend wasn’t available for coffee and so I decided I needed an extra boost!     This recipe is everything. Seriously. I’ve made it several times now, and it is the best cure for a last-minute cupcake craving. The first time I made it I swapped in cake flour and buttermilk, and it was so good I’ve been doing it that way ever since. The results are so moist and tender! I actually get three cupcakes out of this instead of two, but that’s perfect because it makes one for me, and two for my chocoholic boyfriend. You’re my new hero.

    I just made and ate these. By far the best chocolate cupcake ive ever made, I did substitute for buttermilk and cake flour. Not the biggest fan of nutella but it compliments well. Oh and I have to have fresh strawberries with chocolate cake. Quick and easy

  31. The Nutella is necessary for the texture of the frosting, but I have other vanilla frosting recipes you can search for!

  32. So…let’s say you do want to make 4, or 6. Can you double and triple it without losing anything? my kids would never forgive me if I didn’t make them, too!

  33. I have only ever made the recipe as written, but you can certainly try to double or triple it. I also have many other (larger serving) chocolate cupcake recipes that you search for.

  35. I don’t have a larger-scale recipe for these cupcakes, but you can try to increase the recipe yourself, or search for my other chocolate cupcake recipes.

  36. Instead of the Nutella you can sub for peanut butter, although I would recommend using slightly less than the suggested amount!

    These were great! I’ve used other quick/low quantity recipes before and none of them have ever been this close to a full blown recipe. The egg-less-ness means they’re dryer than typical cupcakes, but they were super fluffy and airy and just the right amount of chocolaty. Topped them with a killer mocha frosting and only a few dishes!

    Made these for my 2 yr old’s birthday. My husband said they were the best cupcakes he ever ate. I doubled the recipe for 4 cupcakes, which resulted in too much frosting, but I’ll find a use :)
