When I was first learning to cook, the most basic, easy-to-make meals to me were comfort foods – mac and cheese, baked chicken, apple crisp. These are still the foods that give me that snuggly warm feeling, I love them. Italian dishes, too! Well, as “Italian” as boiled pasta and jarred sauce with that canister of Parmesan cheese can get. Ha! It gives me a giggle to think of those days… and how they still crop up on nights when I just can’t be bothered. Yes, the shaker can of Kraft Parmesan crumbles is still alive in my fridge and actively used!

After I became more adventurous with cooking, I dipped my toes into trying buttery French roasted chickens and crispy Mexican tostadas piled high with beans, veggies, cheese and all the good stuff. Then it was Greek salads with crisp cucumber and creamy feta, smoky Indian tandoori on the grill, and spicy Jamaican jerk chicken in the oven.

Can you tell I’m writing this post hungry, or what?!

But, over all my years of cooking and learning and washing piles of dishes from predictable meals, I never took the leap to try Asian cooking! Whyyyyy, oh why did I insist on ordering it every time I was hungry for something different, but refused to roll up my sleeves and give it a shot?

These days, I can’t get enough of recreating my take-out favorites at home! All you need are the right ingredients, a little creativity, and a brain capable of understanding chopsticks.

Don’t worry, I’m still getting there, too…

Of all the Asian dishes I’ve started to make since taking the leap, though, this teriyaki chicken has become one of my top ten! It is incredibly tender and flavorful, falls apart on your fork and melts in your mouth.

Piled over hot cooked rice and served with a side of stir-fried veggies, this fabulous meal was a major favorite last week. We love recreating our favorite take-out meals at home, and this one we’ll definitely be making again and again.

Slow Cooker Teriyaki Chicken

Slow Cooker Teriyaki Chicken

Yield: 4

Ingredients

  • 1 to 1 1/2 lbs. boneless skinless chicken breasts
  • 1/2 cup granulated sugar
  • 1/2 cup low-sodium soy sauce
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon ground ginger
  • 1 clove minced garlic
  • 1/8 teaspoon freshly cracked black pepper
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • 4 cups hot cooked white or brown rice
  • Sesame seeds and chopped scallions, optional

Instructions

  1. In your slow cooker, stir together sugar, soy sauce, vinegar, ginger, garlic and pepper. Place chicken in slow cooker and coat well in soy mixture. Cook on low for 3-4 hours*, turning chicken occasionally.
  2. Once cooked, carefully remove chicken from slow cooker, chop into bite-sized chunks; set aside.
  3. Pour liquid into a medium saucepan and bring to a boil. In a small bowl, whisk cornstarch and water until combined. Slowly add cornstarch mixture to boiling liquid and reduce to a simmer. Allow sauce to thicken for 2-3 minutes then add chicken to the saucepan. Coat chicken with sauce and let heat through.
  4. Serve over cooked rice. Garnish with scallions and/or sesame seeds, if desired.
  5. Enjoy!

  16. Hi Tiffany – I’d recommend adding it thawed, but if you want to add it frozen, I think it would need an additional hour or two, but I’ve never tried it so can’t be sure.

I used a lot of Hamburger Helper (yuk) and I made a chicken teriyaki in the slow cooker that when it was done looked like mush (and tasted like mush) but my sweet husband would always tell me it was good.     Hello! I made this tonight, and I used frozen chicken. It was amazing! I cooked it on high for 4 hours. I saw someone else ask about frozen chicken, so you can let them know one of your readers tried it and loved it. I usually flip meat a few times, but do it quick so you don’t lose too much heat! I actually don’t like fresh chicken in the slow cooker because it always turns out mushy for me. The flavor was on point, the texture was great – I usually pound my (thawed) chicken out flat, marinate for hours, then I have to stick it under the broiler… so much work! Obviously this isn’t quite the same result but WOW was it good. Hubby had like… thirds :) Thanks so much for a great recipe I will most definitely be adding this to my permanent list of tried and trues!

    Made this tonight. My youngest, age 7, asked for teriyaki chicken, rice and broccoli for dinner. Never made teriyaki chicken before and this was one of the first that showed up on my Google search. Absolutely delicious. Three very large breasts for 3.5 hours was a hair too long as they started to shred. As usual the Mr. And I let all the kids eat full plates as we ate nibbles, to ensure they had enough. Well, there’s nothing left and it looks like frozen pizza for us! I did sub Mirin for the Apple Cider Vinegar, but otherwise a fantastic recipe. No cardboard chicken here!

  53. I haven’t, but I’d suggest using the equivalent amount of chicken (1 to 1 1/2 lbs.), keeping an eye on the cooking time (it may differ), and skimming any fat from the surface, if necessary.

    This was delicious! I made this earlier tonight for some friends of mine and they all raved about it. It was easy and fast to make. 1.5 lbs is enough for two or three people, but you may want to double the recipe if you’re making for more. I bought the boneless chicken pieces that are sold at my local grocery store and that worked out fine. I also think you could do this with bone in chicken thighs, and then pick the bone out later. I wouldn’t recommend this for chicken breasts as I think the meat would turn out too dry to hold the flavor and sweetness of the sauce.

    Saw this recipe this morning before breakfast! So I’m in agreement with Consuelo. I made it today for my family for lunch. My youngest doesn’t like chicken and he ate it all! Great recipe. Instead of using the slow cooker, I just did the chicken and sauce in a frying/sautee pan, and the rice separately. Youngest child cut the green onions at a slant. I made them promise to leave me some so I could have some after my workout.
