Cinnamon Roll Muffins

There is nothing I like more than waking up on a slow, sunny weekend morning and tearing into a sweet and sticky cinnamon roll. My better half prefers a big pile of eggs, bacon and pancakes, but give me one of these – or twelve – and I’ll be sitting on a cloud for the rest of the day.

They may be muffins, but the taste and texture is exactly the same of everyone’s favorite breakfast treat, the cinnamon roll – soft and ooey-gooey, swirled with warm cinnamon and brown sugar, and topped with a few messy drips of white icing.

A scrumptious cinnamon roll shouldn’t have to take hours of preparation and painful waiting for the dough to rise (no patience for sweets here) . . . It should be as easy as, well, making a muffin!

I know you’ll be over the moon for these little breakfast treats, just like I am. These marvelous muffins are soft, sweet and full of the same gooey, oh-so-good cinnamon roll goodness that you know and love… They just take MUCH less time to prepare!

Cinnamon Roll Muffins

Cinnamon Roll Muffins

Yield: 1 dozen muffins

Ingredients

  • 1 cup buttermilk
  • 1/2 cup brown sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla
  • 1 egg
  • 3 to 3-1/2 cups flour
  • 2 tbsp. butter, room temperature
  • 2/3 cups brown sugar
  • 3/4 tsp. ground cinnamon
  • 1 cup powdered sugar
  • 1-2 tbsp. milk or cream

Instructions

  1. Preheat oven to 375° F.
  2. Measure the brown sugar, baking soda, salt, vanilla and egg into a mixing bowl. Add the buttermilk. Add the flour. Stir until thoroughly combined.
  3. Turn dough out onto a lightly floured surface and knead for a minute or two. Roll the dough into a 12-inch by 24-inch rectangle. Using a rubber spatula, spread with butter. Sprinkle with sugar and cinnamon.
  4. Roll the dough into a log and stretch slightly. Cut into two-inch pieces and put the pieces into greased muffin tins or muffin tins lined with cupcake papers.
  5. Bake for 15 minutes, or until golden brown. Allow the muffins to cool for 5 minutes, and then remove from the muffin tins.
  6. Drizzle with icing (if using) when cool.
  7. Enjoy!

  2. French toast has been my favorite breakfast food since I was a little girl. I love it so much that I’ve been known to make it for lunch and dinner also. Plus my kids love it, so I’ve always got an excuse to make it.

    Generally I like to eat healthy for breakfast, but when I finally save up the money to go out and splurge on the best meal of the day something totally sweet and indulgent wins! I first fell in love with crepes when I went to France with my high school French class and have been addicted ever since! :D

  14. Mmmm, plain yogurt with maple syrup and a handful of whatever fruit is in season. Right now it’s blueberries with my breakfast, but I think I might have to switch things up with those cinnamon bun muffins of yours!

  15. French Toast made with homemade cinnamon raisin bread, topped with candied walnuts. It’s almost like dessert but I’ll gladly have it for breakfast. YUM! :)

  33. Breakfast is my favorite meal of the day, especially when I have time for it. I think my favorite would be the classic bacon, eggs, 2 pancakes, and toast, with a pot of coffee on the side. I can eat that meal for breakfast, lunch, dinner or in the middle of the night even! I do love sweet breakfasts of crepes, or Parisian breakfasts of croissants and coffee. But in the end, the classic wins out!

  34. My all time favorite breakfasts were when I was a little kid at the Jersey shore. My dad and I would wake up before my mom and head to the local bakery for fresh baked sticky buns. We would bring them home and devulge with mom. They were always slightly warm, incredibly sticky with soft raisins and crunchy nuts. It is a great memory with my family. I still crave sticky buns the minute I reach the shore…even at 28 years old. If I won your cute silicone pans, I would certainly bake up some sticky bun muffins – I may have to invent a recipe too!   37. My all time favorite breakfast is Cajun Eggs Benedict Po’boy served at Stanley in Jackson Square, New Orleans. Two poached eggs, canadian bacon, hollandaise sauce on Leinheimer french bread. Perfection in your mouth. Stanley has the greatest breakfast/brunch dishes.

  39. What I like for breakfast is really dependant on the day it is. When it is early or I’m in a hurry I like some good granola with nuts, fruits and yoghurt. When I have more time, I like to make a brunch. Some of my favourite components are blueberry streusel muffins, home-made bread (brioche!) with some good butter melting away and a generous scoop of homemade jam, and chocolade croissants. And coffee, there has to be coffee. I like a lot of stuff for my breakfast, but it has to be sweet. I just can’t stand savory food in the morning.

  45. When I was in college, I lived next to a very tiny little taco shop, and they had the BEST breakfast tacos (seriously! Even Food Network agreed. They were voted “America’s best tacos). Homemade tortillas, perfectly scrambled eggs, thick salty slabs of bacon… Heaven. I’d have to say that’s my favorite breakfast.

    The best thing is Joy’s Dutch Baby recipe, I literally scarf down the entire thing (it’s probably a good 4 servings)– fluffy egg whites, light and crispy dough and tons of sugar. So good!

  55. Lately one of favorite breakfasts is a baked sweet potato stuffed with toasted pecans and a side of sauted spinach – I know it’s kind of weird, but really yummy! Oh course, fresh summer berries with yogurt and homemade granola also put a big smile on my face this time of year :).

  57. I’ve always been a pancake and eggs girl, but for the past two years the breakfast that wins my heart is hobo hash. We learned this on the fly while cooking for an outdoor event with my former boss. We k leftover meat from the night before, chopped it up and threw it on the grill. Then we tossed in some potatoes o’brein and grilled it with the meat. While that was cooking we heated up some country gravy (with sausage of course!) and toasted some biscuits. We tossed the meat and the potatoes in with the gravy, spooned over biscuits and ate the best breakfast I’ve ever had.

    I am a HUGE fan of cinnamon rolls. So huge that I’d rather receive a dozen of those on Valentine’s Day than a bouquet of stupid flowers! I’ll eat those anytime. Growing up we always had them for dessert and it wasn’t until I was in college that I learned they were known for being a breakfast treat as well. Well what a perfect way to start the day!

    My favorite breakfast dish is Ihop’s New York Strawberry Cream Cheese pancakes. At home, my favorite dish is regular cinnamon rolls. I love making them more than eating them, though, especially when I make them for my girlfriend’s daughters. I put all of my love for the girls into the rolls :).

    I love the idea of an easier cinnamon roll. What an awesome recipe! My absolute favorite breakfast is pancakes. But not plain old boring pancakes. I like to experiment with fun, crazy additions and flavors. Your muffins kind of make me wonder if a cinnamon pancake could be drizzled with some of that frosting :) And, the mini muffin tins are adorable!   104. These muffins are made from a kneaded dough, not a wet, quick bread like dough, so I’m not entirely sure what the consistency of a cake would be as I’ve never made these muffins into one. I wouldn’t recommend it, though. Sorry!
